An Introduction
Few products evoke luxury and indulgence quite like caviar. Its reputation alone suggests refinement and decadence—yet for many, it can also feel intimidating. This guide is designed to remove that barrier.
Often referred to as "black gold," caviar consists of salt-cured sturgeon eggs. Because wild sturgeon are endangered, all reputable caviar today is sourced through sustainable aquaculture.

How to Serve
Your Caviar
Caviar should be served using a mother of pearl, bone or elk horn spoon to avoid the oxidation that occurs when the eggs come in contact with metal.
Caviar should be served cold. Place the tin on top of crushed ice in a bowl.
The simplest accompaniments are blinis, warm baby potatoes or toast and crème fraîche so that the palate is not confused by other prominent flavors.
Beverages of choice include a "brut" Champagne or highly chilled vodka.
